Goose Island IPA – India Pale Ale recalls a time when ales shipped from England to India were highly hopped to preserve their distinct taste during the long journey. The result is a hop lover’s dream with a fruity aroma, set off by a dry malt middle, and long hop finish.

GI Bourbon County Stout – Brewed in honor of the 1000th batch at our original Clybourn brewpub. A liquid as dark and dense as a black hole with thick foam the color of a bourbon barrel. The nose is an intense mix of charred oak, chocolate, vanilla, caramel and smoke. One sip has more flavor than your average case of beer.

GI Barleywine 2015 & 2016 – Aged in the third-use barrels that were once home to Kentucky bourbon and then our renowned Bourbon County Stout, this traditional English-style barleywine possesses the subtlety of flavor that only comes from a barrel that’s gone through many seasons of ritual care. The intricacies of the previous barrel denizens – oak, charcoal, hints of tobacco and vanilla, and that signature bourbon heat – are all present in this beer. Hearty and complex, Bourbon County Brand Barleywine is a titan and a timeline; a bold, flavorful journey through the craft of barrel aging.

GI Bourbon County Coffee 2015 – Everyday Goose Island smells Intelligentsia’s coffee roasting next to the brewery. This world class roaster puts the same craftsmanship into their coffee as Goose Island does with its beer. Each year this excellent coffee stout is made with a different bean variety, chosen in collaboration with our brewers and Intelligentsia’s experts. With the change in coffee comes a change in the flavor profile, making each release truly unique from the previous years. GI Madame Rose – Madame Rose is a crimson colored Belgian style brown ale fermented with wild yeast and aged on cherries in wine barrels. Layers of malty complexity, sour cherry, spice and wood notes make Madame Rose an ideal beer to suggest to Bordeaux enthusiasts and beer drinkers fond of Belgian Kriek and Flanders Brown Ales.

GI Sofie – Our sparkling Belgian Style Farmhouse Ale is wine barrel-aged with an abundance of hand-zested orange peel. Spicy white pepper notes contrast the citrus tartness. The light, refreshing, creamy vanilla finish will excite those fond of Champagne. Originally brewed by Belgian farmers to attract the best farm hands, we were inspired to brew an exceptional ale as inviting as the original Belgian Farmhouse ales. Light and effervescent, we named it for our founder’s granddaughter Sofie.

GI Matilda – Inspired by great Trappist ales, our complex Belgian Style Pale Ale is fermented with the wild yeast Brettanomyces. Matilda pours a golden sunrise color with dried fruit and clove aromas, a spicy yeast flavor, and a satisfying dry finish. According to legend, a grateful Countess Matilda founded a monastery where, over centuries, monks have been brewing ale unique in character. While in Belgium, we were inspired by the story and the monks’ beer. We returned to Chicago and brewed our homage – a Belgian Style Pale Ale named Matilda.
